If you haven’t noticed already, I’ve been in a bit of a drinks kick (mint tea, infused water, berry mojitos, can you blame me?)…not sure why, but I can’t say I’m sorry and I definitely can’t promise that this trend will stop.
In fact, I’d like to add another one to the list just in time for the 4th of July holiday weekend, a healthier twist on a summer classic: lemonade.
It is no secret that I prefer cool weather over warm, but give me a glass of fruity, refreshing lemonade and I will enjoy my time in the sun with the best of them…even if that time has to be short because my Scandinavian skin starts burning rather quickly.
This recipe all begins with a 3 ingredient mixture and from there, the possibilities are endless!
All you will need is:
And here’s how you make it:
- Heat 2 Tbsp water and 1 1/2 tsp honey in a shallow saucepan until completely combined to make a honey simple syrup (no need to simmer)
- Ream or squeeze the lemons to collect about 1/4 cup juice (approx. 1 large lemon)
- Combine the lemon juice and honey simple syrup
Voila! Now for the experimenting…
Start by adding this combo to some ice and water for a simple, refreshing glass of lemonade. Freeze the honey-lemon combination into ice cubes to melt slowly in your glass of water. Add your ice cubes to a cocktail. Toss some fresh fruit into your lemonade. Muddle in some herbs to any of the above…and of course, feel free to adjust the honey and lemon to your taste as you go.
